Kids Food #13 - Ready Made Meal

So by now you must have figured out that I'm a working mom.
And there is just no way that I can cook fabulous meals every night.
There is just no way.

Occasionally I resort to feeding Stella ready made meals, bought at the grocery store.
I am not going to debate the nutritional value of these meals.
To me they are a life saver.

Some days I simply run out of time... do you know that feeling?

Chicken Salad (again)

It feels like I am on an eternal diet...
But actually I have made a change in my lifestyle and eating habits, for good.
Guess there will be lots of chicken salads in my future.
Green lettuce and ripe tomatoes.
Juicy cucumber and tasty chives.
Salad for lunch.
Salad for dinner.

Kids Food #12 - Chicken Noodle Omelette

We have a sweet little kids cook book with all kinds of easy recipes.
My husband actually found and made this one - he is quite good in the kitchen!
It is very simple and the kids liked it.

A chicken noodle omelette.
There is a bit of prep work involved, but once everything is ready and in the pan, it goes very quickly. I sliced it up 'pizza' style and as always Heidi enjoyed hers with a splash of tomato ketchup on the side.



Recipe:

1 packet of instant noodles
175 gram cooked chicken, chopped up finely (I used one chicken breast)
2 teaspoons parsley, finely chopped (I left this out since I did not have any in the house)
2 eggs, loosely beaten
2 tablespoons grated cheese
Optional: Bacon or ham (My husband's little addition to the recipe!)

Method:

1. Cook the noodles as per the instructions on the packet and drain them.
2. Mix the cooked chicken with the noodles, parsley and eggs in a bowl.
3. Pour the mixture into a non-stick pan and let it cook on medium heat for about 5 minutes. Do not stir, just wait it out.
4. Sprinkle the cheese on top and then place the omelette under a hot grill until it gets a bit of colour and the cheese melts.

Serve immediately!

Not Quite a Weekly Menu


This week I will be travelling for work, so all the cooking will be done by my husband 
(poor thing...).
Since I don’t have a clue what he will be making, or what I will be eating myself, I couldn't really put together a menu for this week.

So here are some little food illustrations.
I am experimenting with water paint which I haven’t used in 20 years.
Not sure why not.
I posted my illustrations yesterday on Pieces of Elma so this is a little bit of a repeat...

Here is a little broccoli floret x 5

And a big bowl of pasta, just because I do like a big bowl of pasta!

Vegetable Patch #2

And the fun continues...

We sowed seeds!
Outside!
Carrots, chives and radish seeds.

It was a glorious sunny day and after receiving the instructions from Moesie earlier this week I couldn't wait to get sowing.

Heidi was very excited too.
So excited that she dug a hole and dumped 12 carrot seeds into it.
I only realized later what she did and by then it was impossible to retrieve all the seeds.
They have been buried.
Oops.

On we went, sowing the rest of the seeds.
Reading and following the instructions carefully as we went along.

Let's hope for the best!

DWZI - Love Love

This week was busy.
Busy. Busy. Busy.

The kids slept through the night for the first time in weeks and that, my friends, is rare.

Spring is in the air and I love hearing the birds in the morning and feeling the sun on my back.

And did I mention that I have a really wonderful husband?
He showed up one evening with a gift for me.
Just because.

Happiness!
