Breakfast for Dinner

Bacon and eggs tend to be classified as breakfast but in my opinion it is good any time, any place.
Since I stopped at the Mark & Spencer's on the way home from Woerden and just happened to have English muffins and cheddar cheese I figured it would make a great dinner. Bacon, eggs, cheddar cheese (yes, the real thing!) and a big salad to make sure we eat our greens... yummy yum yum.

Avocado on Toast

I can think of a lot of ways to eat avo.
But when it comes to breakfast then I prefer mine on a slice of toast, mashed up with a pinch of salt and some fresh lemon juice. Perfection.

Scrambled Eggs for Lunch

I like breakfast pretty much any time of the day or night.
So scrambled eggs with sausages on toast seemed like a pretty good lunch.
It's quick, easy and usually makes the family happy too.
Except this time.

The kids did not like the sausage mixed into the scrambled eggs.
Well, you can't please everyone!

I enjoyed my scrambled eggs with a little bit of grated cheese and some tomato and onions on toast.

Breakfast Memories

Breakfast is BIG in South Africa.
Not so big in the Netherlands.

Pretty much every restaurant in South Africa serves breakfast, from very early until late. And when I say breakfast I mean eggs, bacon, toast, sausages, hash browns, fried tomatoes, bottomless coffee, everything.

Growing up we used to go out for breakfast once a week. It's just what you do.
And if you don't go out for breakfast then you make it yourself.
You go big or go home.

Now I know that you simply should not eat fried eggs and bacon every single morning.
(You shouldn't but how I wish that I could...)
A lazy weekend breakfast indulgence is allowed every now and again.
Especially when all you need to do is show up.

Now that my kitchen is out of bounds I seem to crave a big breakfast more than ever.
Looking at these photo's taken a month ago in South Africa simply makes my mouth water.
Let's fry some eggs!

Scrambled eggs and beans on toast

Breakfast is the most important meal of the day... not!
Every meal is the most important to me.
That being said, I love toast and anything that goes on top of toast.
Scrambled egg is easy to make and tastes really good on toast, thus that was my breakfast choice for the day.


Take two eggs, scramble them with a fork and season.  (If, unlike me, you are not on a diet or watching your dairy intake then add a bit of cheese, milk or cream to your mixture just to be decadent)

Heat up a dash of vegetable oil in a non-stick pan and then add the scrambled eggs.
Once the eggs are in the pan you need to scramble like crazy for two minutes and then take it off the heat. It is very easy to overcook the eggs, and I tend to do that more than I'd like to admit.

My husband always says the trick is to take the eggs off the heat when you think it is not quite ready.

I added some Heinz beans in tomato sauce to my breakfast feast.
Let the day begin.

Banana, honey and peanut butter toast

My favourite breakfast is toast.
Toast with jam, toast with eggs, toast with cheese...
But my favourite topping of the year has to be banana, honey and peanut butter.
It is sweet and delicious and healthy too.

Needless to say this is a very child friendly breakfast - Heidi loves it and is always very eager to scatter the banana slices on the toast. She also tries to spread the peanut butter with her Ikea plastic knife but more often than not she ends up eating it straight from the jar.


























Ingredients:
2 slices of wholewheat toast
margarine (optional)
a tablespoon or two of peanut butter per toast
one banana
a drizzle or two of honey

Method:
Spread the peanut butter on the toast
Slice the banana and place the banana slices on the toast. Scatter them, make a pattern, get your kids to help.
Drizzle the honey on top of the bananas and enjoy your breakfast.

Remember, breakfast is the most important meal of the day :-)
