Courgette Pizza

I love pizza... but it is not exactly good for my weight.

That does not stop me from enjoying a slice every now and again.
I always make our pizza at home, that way I am able to control what I put on top of it and by default control my calorie intake (don't laugh, I'm not kidding!).

One of my favourite toppings is courgette. A tomato base, thinly sliced courgette ribbons (I use a potato peeler) and a little bit of mozzarella cheese on top. 

Bring on pizza night!

Kids Food #11 - Pizza Night!

Who can resist a pizza?
Certainly not my kids.
Every now and again, usually on a Saturday night, we have ourselves a little pizza party.
Heidi loves it. She just loves helping with adding the toppings.
The last pizza we made was pretty basic since Heidi wanted ham and cheese on her pizza, but you can let your imagination go wild.

The best part of this dinner is that I buy the pizza base and sauce ready made in the supermarket. Yes, you simply open the packet and roll out the dough in an oven tray. It does not get easier than this and it is much cheaper than ordering in!

Spread the sauce over the dough. Select your favourite toppings and generously cover the base. Lastly sprinkle grated cheese on top and pop into a hot oven for 15 minutes.

Definitely a winner in our house in terms of the kids and the grownups. Just serve with a green salad and enjoy!

Pita Pizzas for the Kids

Sometimes my dinner choice does not work for the kids... that's when I make something quick and easy to serve along side our dinner.

Pita pizzas are the easiest thing you can make and it will take about 15 minutes.

Ingredients:
Pita breads
Tomato ketchup or tomato puree
Grated cheese (My kids prefer a young cheese, but cheddar or similar will work just fine)

Method:
Switch on your oven and set it to grill (250 degrees Celsius).
Remove pita's from their packaging and spread the flattest side with a bit of tomato ketchup.
Sprinkle some grated cheese on top and place under the grill for about 10 minutes.
Keep an eye on the oven and remove when the cheese has melted.

Cut in quarters, let it cool and serve to hungry kids.

Pizza night!

I love pizza.

So since I am home alone with the kids for the weekend I decided to make pizza. Not order it, but make it. Hands on with Heidi. Of course you should know by now that I do try to make things easy for myself thus I confess to not making the pizza dough. I bought some ready made wholewheat pizza bases at the bio shop. Easy as pie.

Add mozzarella, avocado, parma ham and I am in pizza heaven.
I will gladly have avocado for breakfast, lunch and dinner... if I could find ones that are perfect. I keep buying avo's only to be disappointed when I cut them open. In fact, I've had a real bad run of avo's lately thus I was elated when I cut open my latest purchase to see the green, smooth, beauty of an avocado.

I had half of it for lunch and saved the rest for my pizza.
Yes, you know me, I have been planning my dinner all day long and by 5pm I switched on the oven. Heidi was my happy helper and together we assembled the pizzas. I simply squirted some Heinz tomato ketchup on the base and then layered everything else on top. 10 minutes at 220 degrees Celsius and the melted delight was ready to eat.

Heidi's pizza was a very basic pizza - tomato ketchup and grated cheese. I saved the buffalo mozzarella for myself (greedy me!). Of course a pizza is not complete in my opinion until I cover it with rocket leaves and a tiny drizzle of good olive oil.

Maybe next time I'll make the pizza dough, maybe not.
