If there is one thing I love making then it is roasted vegetables.
The simplicity of it.
Peeling, slicing and dicing the vegetables is a type of meditation to me.
Mixing them up with a drizzle of olive oil and a dash of balsamic vinegar.
Since we had a big crop of cherry tomatoes I could not resist adding them to the mix.
They were sweet and juicy.
To finish the dish I added a few fresh fennel leaves.
I'm so looking forward to my next big vegetable roast in the new kitchen!
